Meat grinder is a machine that cuts and breaks large pieces of raw meat into small meat grains (generally 2~10mm), which is convenient for subsequent processing (such as chopping, mixing, etc.). It is an essential machine for sausage processing. The meat extracted from the meat grinder can eliminate the defects of different types of raw meat, different soft and hard, and different thickness of muscle fiber, so that the raw material is uniform and the quality of its products can be guaranteed. Now the latest design of advanced meat mincer, in addition to the basic function of mincing meat, as well as mixing, removing tendons, tenderizing and mixing.
Meat mincers are divided into ordinary meat mincers and frozen meat mincers according to the raw materials they deal with. Ordinary meat mincers are used for fresh meat (cooled to 3~5℃). Frozen meat mincer can directly ground the whole frozen meat of -25~2C, can also ground fresh meat; According to the number of orifice plates of the meat grinder, it is divided into one-section type (1 orifice plate, 1 group of knives) and three-section type (3 orifice plate, 2 groups of knives); According to the structure of meat mincer is divided into single auger meat mincer, double auger meat mincer, the former has only one spiral shaft, the latter has two spiral shaft.
The structure of meat grinder is composed of hopper, screw feeder, reamer, hole plate, fastening nut and so on. Its shape and structure are shown in Figure 2.5 and Figure 2.6.
Hopper used to hold meat, it is welded stainless steel plate, the surface is polished. Some cover the hopper, open the cover machine stop, close the cover to start. The back end of the screw feeder shaft is connected with the drive system of the square shaft, the reamer is fixed on the shaft, in the working process, the reamer rotates with the screw feeder. It is mostly stainless steel forging, after polishing, surface hardening treatment.
How a meat grinder works
The meat mincer installs the mince hole plate close to the reamer at the front end of the screw feeder, fixes the nut of the press plate at the head of the machine, and the motor drives the screw conveyor and the reamer to rotate together. The trimmed raw meat is added from the hopper and falls into the spiral feeder due to the action of gravity. With the rotation of the spiral shaft, the raw meat is extruded from the hole of the hole plate, and then the meat is cut off through the shear action between the reaver and the hole plate. The meat is discharged from the hole of the fastening nut through the hole plate to achieve the purpose of mincemeat.
